simple method./;
1.(mashed potato)rebus potato hingga lembut n mash dgn shifter (lebih halus). masak daun limau purut dgn air 10 ml, cream 10 ml , season dgn garam, lada putih, dan serbuk buah pala..
2. untuk glazed soy sauce.  kita tumis bwg kecil yg dicincang, tuang air asam jawa, sos soya pekat, gula perang n reduce smpai sebati dan pekat.
3. lemongrass hollandaise. kisar serai dan bahagi kpd 2 bhagian. first part kita reduce dlm vinegar bersama white peppercorn, salt and sugar dlm pan. reduce butter dengan serai n biarkan sejuk. dalam bowl lain kacau kuning telur dan air serai dan masukan secara perlahan butter reduction td.
4. blanch asparagus n kaila slama 1 minute, kemudian saute smua sayur dgn butter n garlic with seasoning.
5. seasoned salmon di masak atas api yg perlahan n pan yg tidak panas dgn olive oil dan butter.
